Hi Dann,
If you are twisting both the RA and Dec knobs to keep an object in the field of view it sounds like the mount is not aligned with the pole.
Once an equatorial mount is aligned with the pole one only needs to twist one knob (the RA knob) to follow objects across the sky.
Obviously you don't need to worry about this with a Dob but since you've already got an equatorial you might want to get some help with setting it up and aligning it (bring it to a SLAS star party and I'd be happy to help).
