You guys should try eating buffalo. It is leaner and lower in fat than beef. I had buffalo prime rib and buffalo ribs last weekend. It was a wonderful meal. We got it at the Gun Barrel in St George. I also love elk but haven't tried that menu yet. Back in '96, I spent a week at Teton Village and had elk and caribou diane. Very delicious meal! The bill came to $125 for two people though. But it was worth it. Wild game is a great way to get some red meat without the risk of steroids and antibiotics that they feed the cows.

The rule of thumb is, the more flavor a food has, the worse for you it is. One of life's little inequities! :o(
