For any who may be interested, I am a semi-pro meat smoking competitor. I will be smoking a rack of St. Louis cut pork spare ribs. I smoke them for about 5 hours, using cherry and/or hickory woods. For those who would like to participate, R.S.V.P. me by Friday afternoon. I will buy, prepare, smoke and bring the ribs to the Star-B-Que.
