I've had great luck using my father's old turntable and a PHONO PREAMP to record into my computer soundcard. Here's a link for the preamps -- they "boost" the signal of the turntable without adding noise so the computer has an adequate "line in" signal. I've been very happy with the pre-am I got here (I chose the one with volume control): http://www.phonopreamps.com/index.html As far as processing the sound once it's recorded, that's a little tedious. I usually record one long .wav file onto a program called goldwave (others like soundforge, etc will work) and use filters to remove crackels and hiss. Then split the big file into individual tracks, name them, burn to CD and make a cover.
