A bunch of the East Coast Cruisers use single inflatable kayaks made by Stearns and West Marine. They inflate and deflate quickly for storage down below and are a good choice for fishing, exploring or just getting to shore. However entering and exiting from both an anchored boat and the shore is an acquired skill, but not impossible. Even with a rechargeable power inflator that we all use, which is very fast, I get tired of putting the kayak away every day, so I tend to leave it inflated and tow it. In lower winds and motoring a conventional tow works fine, but as winds build I lift the bow up to the stern of the tow boat with just the skeg in the water. I've never had the dink fill with water, but have had it flip over when towing at a distance in high winds. At the last NC cruise Bones used a nice inflatable open double kayak. I don't recall who made it, but it seemed well built and more than adequate for two people. Rick M15 #337 Bluebird
