The bottom line is an eye might feel more secure than the stock stem fitting arrangement. Given the fact that the standard set up is over the lip of the deck/hull join, it can be a bit of a worry point when cranking on the winch at some launch ramps (depending on how steep they are). I sometimes wonder if it's even more weight than the pressure of a loaded fore-stay when under sail in a heavy blow (they terminate at the same point). I too have wondered about drilling an eye through the hull for the purpose of hitching. Glad to see someone asking the question. The winch post height is fine, but the corners of the post have split from rust, and the trailer needs other work as well (in addition to titling and licensing). If your trailer winch is located too low, a quick trip to a local trailer shop will take care of that. They can add a foot or more to the winch post, and that will provide you with a horizontal pull. I had a Trailrite trailer for my M15 - LEPPO, and never had a problem using the stem head fitting for the winch hook.
