I've never heard if damage to sails due to cold temps. According to this, PET (the plastic sails are made of) becomes brittle around -40C/-40F: https://omnexus.specialchem.com/polymer-properties/properties/ductile-brittl... I'd imagine it would be possible to damage a dacron sail sailing at -40F, but I can't imagine how you'd find such conditions with liquid water to sail on.
