I think we were on the boat about 6 days on this trip and have been out that long a few times now. Essentially our setup is a cross between backpacking and car camping. We had a cooler which kept things cool for about the first day. All the other food had to be able to get warm. We slept in the cabin with everything moved to the cockpit at night. During our one really rainy day everything got pretty wet and never really dried out properly after. Although we slept inside I sometimes sleep in the cockpit and leave more things inside. Because of all the rain there were a lot of flies that could get pretty irritating. They just buzzed and landed and didn't bite. One night we had bad no-see-ums that came right through our bug netting we had over the hatch and bit us a lot. That was pretty miserable. Another new issue I faced was lack of circulation in the cabin while sleeping. My feet hated that! We cooked on a butane one burner stove, carried 5 gallons of water in a jug stowed in the front of the cabin, and went to shore when nature called, properly selecting the location and burying the evidence. I tried to find the particular model solar panel we have but couldn't find the order. It came from Amazon and I purchased it mostly because it was about the right size for the hatch and was cheap. I got a cheap one for proof of concept and intend to replace the one I have with a better one when I get around to it. Not that there has been any problem with the cheap one I have. Works great. My son and I plan to be out on the boat for up to 10 days in July on the Great Slave Lake. Luckily the water should be cold enough a few feet below the surface to cool things down (like beer) before consuming. Otherwise, the approach will be about the same.
