Norm, yea, you can even sail with the center board up! The center board is not that heavy and adds little to the overall stability. It really helps in preventing leeway and being able to point into the wind a little closer. I had a little center board "stick" problem when I first got my boat and sailed it with the center board stuck in the trunk for a month! If the sails are furled, would it be safe to motor with the keel up for better performance. I was thinking about fairly calm days on the ocean. Since I'm so new to sailing, I don't have a clue.
