Gimballed stoves are over rated. Remember that Lynn and Larry Pardey sailed around the world on a 24 foot boat that had a bulkhead mounted stove. My opinion is not to cook while underway. (unless its soup in a thermos to get you through an 18 hour storm). Cooking below has some serious drawbacks also. (Heat, smoke, heat on the overhead, clean air, etc.) Probably the best way to camp cruise the 15 and 17 is to cook in the cockpit on a special box built for a stove. One that won't tip over and has a place to store below while underway. Keep it simple. Bob Honshells wrote:

Ahhhh . . . Hadn't thought about differences in weight for whatever set on the burners . . . I think you just posed an insurmountable complication . . . I wonder how gimbaled stoves work on big boats?

Not only would it be big - but while it might be relatively easy to make a gimbal for a compass or even a one burner stove, think of the complications to adjust the balance or a pot of coffee on one burner and a pot of stew on the other - then help yourself to a cup of coffee while waiting for the stew to get hot enough (readjusting the gimbal) then stirring the stew and having the coffee in the pot start its own sloshing about -
If you get one built, you really will deserve a patent on it.
