Joe, My success with video's on the water is due to the anti jitter feature in my camera. It is a high end Sony ( quit old now, I hope it still works) and the feature then was called steady shot. It locks in on the focused object and keeps it in the frame in it in spite of the wave action. You still have to help a lot with steady eye and hand but it makes that nasty seasickness feeling go away.
