The May 2002 issue of SAIL has a one page "how-to" on "Mounting an In-Hull Depthsounder".         Look on page 103.  They suggest epoxying a piece of PVC to the hull, floating the transducer in mineral oil and capping the pipe with a reducer coupling to hold everything together.
