I would not recommend hand sewing an entire sail. Usually ziz-zag stitches are used on the seams that are held together with double sided sticky tape. A regular home machine will do almost all of that. The corner patches may require hand sewing. Time required? Sailrite kits have everything precut and match marked. You tape things together and add a few pins or staples and start sewing. A small jib sized sail should take a few hours.
