Bow cleats came on my "new to me" Monty 17. I am not really happy with how the previous owner installed them but they certainly work nice. I just think they look a bit out of place. That sounds like something I'd like to do, for the same reasons. Basically the center cleat can't handle an anchor rode and two tie offs at raft-ups.
Do you have a picture of your installation? What brand cleat did you use?

I anchor out about 30 nights a year and went many years without them with no noticeable affects, even in some 50 kts storms.
I have recently added 2, 4" cleats where the bow chocks would normally go.? These were mostly to facilitate raft ups with a main anchor out and a boat on each side.? The older standard cleat cannot accommodate a lot of line.? The newer center cleats on the Bob Eeg boats have a much higher line capacity.
If I am anchored alone I use one of the newly added side cleats and there is nothing there to chaff against.
