I use a Sevylor inflatable cheapie. Works fine for me as long as I don't have to row a long way. On Spirit we have an Achilles LT-2 inflatable dinghy. It fits well on the starboard quarterberth where it slides completely out of the away . I looked into folding and inflatable kayaks but I have a girlfriend and an 75# dog. Consequently, the dinghy's truck-like carrying capacity took priority over the kayak's sports-car paddling characteristics. The LT-2 rows exactly like you'd expect a blunt- nosed, flat-bottom, 7'-3" inflatable w/ captive aluminum oars to row. Luckily, M17s can poke their nose pretty close to shore so my dinghy trips are blessedly short. Overall, I'm happy with the LT-2 and recommend it to folks who need some carrying capacity in their dinghy but sail in areas where towing isn't advisable.
The N/S 27 is tied with the Shannon 28 for my all-time favorite boats in this size range.
