Oddly there was an effect you could apply like this built into the original Sony Playstation's audio CD player. It kinda mixes out the vocals but the results are...erm...mixed. It seems to work better with some stuff than others, basically the more simple the recording and less overdubs etc the more effective it is and I would imagine it would be the same with dedicated software. With the Beatles for instance, who's stuff was mostly recorded on four-track often with a separate vocal track it is fairly easy to almost completely isolate or remove the vocals (I have seen a few dodgy bootlegs where this has been done and they are listed as alternate takes or demos). More contemporary music recorded on 48 track or whatever is harder to break down, though applying similar methods can result in some interesting effects, or just a kinda muffled hollow noise (on the PS at least). I'd imagine you could use some software to remove certain frequencies but this is likely to still affect both vocals and music. There is a site dedicated to accapellas, I forget the address but you can access it via http://www.boomselection.net which is a pretty tidy site in itself. Alternatively, try searching 'accapella' with any decent file-sharing client and you should return dozens of interesting vocal tracks.
