So Much More Than Green Beer
If you've checked out this month's issue of Saveur, you've probably
already gotten a glimpse into the great artisanal food movement
happening in Ireland. If you haven't, this month is the perfect time to
introduce yourself to some underrated eats. Thanks to some quality
regional ingredients, you can create a meal perfect for cool Spring
weather and, of course, St. Patrick's Day.
Start off with corned beef from Niman Ranch. All natural top quality
brisket gets some serious soak-time in a classic blend of spices.
Ready-marinated. Ready to cook. One 3 1/2 pound brisket will easily
serve 6 to 8.

There's a bevy of organic vegetables to round out an Irish meal.
Organic cabbage, organic potatoes, leeks, and greens. Whip up a rustic
champ to go with the corned beef, poach the cabbage in some butter and
water. Or if you're purist, steam some new potatoes and sprinkle some
good sea salt.

Ireland has long been home to a thriving cattle population. Whether for
beef or for dairy, green pastures and sea winds make for some divine
dairy products. For example, our latest shipment of artisanal cheese
from Southern Ireland...
Cashel Blue's distinctive veining and savory flavor profile make it a
favorite with cheese lovers. This farmstead cheese is crafted by Jane
and Louis Grubb in County Tipperary. A closed herd of Fresian cows graze
across Suir River Valley. Aged 2 to 3 months, it's incredible served at
room temperature-it's runs and oozes beautifully, like a gorgonzola
dolce.
Cashel Blue (County Tipperary, Ireland)-$15.99/lb
Coolea is relatively unknown stateside. But it's extremely popular with
the home crowd thanks to the efforts of people like Helene and Dick
Willem. On their 60-acre farm in County Cork, they age their wheels 3
months to a year. The result? A Gouda-like cheese that's dense and
caramel-like. Coolea is made from pasteurized cow's milk.

Durrus is a raw cow's milk cheese made from local herds in Coomkeen on
the Sheep's Head Peninsula. Jeffa Gill heads up production for this
semi-soft washed-rind cheese. In addition to its lovely coral color,
the cheese has a complex deep flavor that captures something of the wild
nature of this part of Ireland, where the sun shines intermittently, and
a constant wind blows in salt-drenched rain from the Atlantic. Irish
terroir at its best.
Durrus (County Cork)-$18.99/lb
Irish Cheddar made from pasteurized cow's milk in County Tipperary is
wonderfully mild. Aged for 3 to 6 months, it's prized for its natural
taste and distinctive character.
